Bed Head - Breakfast Pancakes





















Good morning!
It has become a ritual in our house, every Saturday morning we pull ourselves out of bed, stumble downstairs and whip out bacon, eggs and fluffy pancakes. These are fantastic, fluffy, filling and the sour milk adds something that I haven't tasted in any other pancake recipe.
1 3/4 cup milk (2% works the best)
2 Tablespoons white vinegar
1 egg
2 Tablespoons melted butter
2 cups all purpose flour
2 Tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 teaspoon vanilla

Measure out milk, add vinegar. This will "sour" the milk. Let this sit for about 5 - 10 mins.
Add melted butter and beaten egg to milk.
Pour all wet ingredients into a mixer. Combine all dry ingredients in a separate bowl. Slowly add to wet, blend until all dry is mixed in.
Let the batter stand for at least 30 mins in the fridge.
Heat griddle to med.high. 
Spray the griddle with cooking spray (or my personal favourite, coat it with butter).
