Little Bubba - Coconut Shrimp



















 I had the best coconut shrimp in Miami a few years ago at Bubba Gump's.
These are almost just as good, plus totally easy and inexpensive (and a great party dish!).

1 cup flaked coconut, toasted
1 pouch Shake'N Bake Extra Crispy Original Coating Mix
1/4 teaspoon curry powder
1/4 teaspoon cayenne pepper
24 uncooked large shrimp, peeled, deveined
1 egg, beaten

Preheat oven to 400 degrees F.
Combine coconut, shake`n bake, and spices in a shallow bowl.
Dip each shrimp in egg, then roll in coating mix until evenly coated, place on baking sheet, leaving room around each shrimp.
Bake 10 - 12 mins, or until shrimp are tender.
Serve on platter with cocktail sauce.
