Vanilla or chocolate? It's a question that usually doesn't really need more than an instant to consider. Chocolate all the way! Until, of course, I found these...
These may be easy, but they take some work - but luckily, not on your part!
I think the most important detail is the mixing. After each step, beat on high for about 5-10 mins. This make the dough fluffy, light, and much better. Remember - mix well!
1 cup sugar
1/2 butter - soft
2 eggs
2 teaspoons vanilla
1 1/2 cups flour
2 teaspoons baking powder
3/4 cups milk
Preheat oven to 350 degrees F.
Thoroughly grease and lightly flour the bottom of a 9x9 cake pan. (or use cupcake liners).
Combine sugar and butter in mixer and beat on high for at least 5 minutes.
Add eggs, one at a time, beating, again on high for at least 5 minutes for each one.
Add vanilla.
In separate bowl, blend flour and baking powder together, add a little at a time to mixing bowl, blend on high while doing this.
Add milk slowly, and - as par usual - beat on high while adding. This will smooth the batter and create a more "whipped, light" look to it. Trust me - totally worth the extra time!
I always make this into cupcakes, and it usually makes about 16.
Spoon batter into cups (or pour into pan), fill cups close to the top - they don't rise all that much.
Bake for 20 - 25 mins for cupcakes, 35 - 40 mins for a 9x9 cake.
Cake is ready when toothpick inserted into the centre comes out clean.
I topped with vanilla butter cream icing and coconut shavings.
