Summer Salad Series - Mango, Prawn & Avocado
It's finally summer! Time to bring out the salads!
This one is great as a meal or as a side.
12 large raw prawns (12 per person, if for a meal: if for a side, 3 per person would be fine)
Mixed salad greens
1 tomato, wedged
1 avocado, wedged
1 mango, wedged
1 Tablespoon olive oil
1 Tablespoon Baltimore Bay Line Seasoning (you can find this at your local grocery store)
goat cheese, crumbled (however much you want)
Peel prawns and marinate in oil and seasoning for at least 1 hour.
Mix all greens together. Top with crumbled goat cheese.
Add shrimp and excess oil to small fry pan.
Cook over medium heat til shrimp are bright pink.
Add hot prawns and oil to salad.
MMM!
(I added a tiny bit of Italian dressing, it was fantasic!)
