Homemade Heaven - Buttermilk Biscuits



















Christmas break was a starchy time at our house. I was working off of the 'practice makes perfect' philosophy, but, let's be honest, they taste good and I was marginally addicted to them. So, being that I have sworn them off until at least May or June, I'll post them on here, that way everyone else can enjoy them. These are awesome little biscuits, they're awesome fresh out of the oven (careful, you can eat a lot this way) with a bit of butter, they go great with any kind of dinner (plus, they are WAY more impressive then bought buns) or, my personal favourite, warm, as dessert, with butter and maple syrup. So good! Anyway, give these a try, you'll love them. 

1 cup butter, diced into half inch cubes
4 cups all purpose flour
2 Tablespoons sugar 
1 1/2 Tablespoons baking powder
1/2 teaspoon salt 
2 large eggs 
1 cup buttermilk 

In a large food processor (you can use a pastry cutter instead, it'll be a pain in the butt, but it'll work) place the diced butter, then add flour, baking powder sugar and salt. Process for 12 seconds (butter will form tiny little balls, about the size of a lentil). In a separate bowl, whisk eggs and buttermilk together. Remove the flour mixture from the food processor into a large bowl (preferably stainless steel), stir buttermilk/eggs into the flour, using a spoon as much as possible (the more you touch it, the more the butter will melt before it gets to the oven). Kneed dough until it just comes together. Roll dough out to an inch thickness. Cut into rounds (use a cookie-cutter instead of a glass if possible - a glass will seal the edges and they wont rise properly - wow, this recipe does seem to have a lot of rules...)   Preheat oven to 425 degrees F. Once the biscuits are in, you can turn it down to 400, you just want the oven as hot as possible at the start. Bake for 8 mins, turn pan (quickly! you don't want to lose too much heat) then bake for another 8 - 10, until tops are flaky and golden brown.
