Downton Abbey Heartbeak Easer - Jambalaya

So... I just finished watching the end Downton Abbey : Season Three and I just have to say; WTF!!?? Seriously!! WTF!

Shake it off you say? Nope. Can't. Sorry.

In other (much much happier) news, Episode 5 of Outlander (which may just be the best thing ever invented / filmed / anything) is available on Saturday. So I guess... silver linings. Fingers crossed for shirtless Jamie again! ;)

Anyway, miserable and heartbroken over the latest TV drama - like me - ? Well, I have an easy, dinner to ease a bit of the pain. Ta-da! Jambalaya!

Now, I used to use spicy Italian pork sausages, which are totally fine and awesome, but I've found Gluten Free spicy Italian turkey sausages - and they are even better, half the fat and more than half the calories. Who wouldn't like that? Plus, even if they are a little dry, it doesn't matter at all.

1 package of spicy Italian sausages (turkey or pork - doesn't matter) - roughly sliced
2 chicken breasts - cubed
1/2 white onion - chopped 
oil
1 red pepper - diced
1 green pepper - diced 
1/4 cup spicy BBQ sauce
1 1/2 cups Veggie or Chicken broth
1 can Italian stewed diced tomatoes
1 1/2 cups Minute Rice

Heat oil in a large pot, add sausages, chicken and onion. Cook until done. Add the rest of the ingredienrs and simmer until  rice is fluffy (about 20 mins).
Enjoy and try to forget the end of Season 3... Better yet! Watch episode 2 of Outlander. MMM!!
